Description
A freshly picked assortment of baby eggplants are for sale at the farm stand.
Often thought of as a vegetable, eggplants are actually fruit. They bear tiny soft seeds in their flesh. Their skin color can be a deep dark purple, light purple, aubergine or white.
Originally cultivated in Asia, these berries have become popular all over the world.
Rather a bland taste on their own, if cooked in flavorful oils and seasonings, the soft flesh absorbs those flavors and is one of my favorite summer dishes.
Best of all, I love the rich colors and whimsical shapes of this delightful fruit, and will often keep a few displayed in a bowl on my kitchen counter.
